Introducing my delicious Leek & Potato soup which is not only heartwarming but it’s vegan, dairy free & gluten free. Perfect for these colder days!
Ingredients
- 1 tbsp olive oil
- 1 x onion
- 3 x large leeks
- 3 x garlic cloves (crushed)
- 1 x bay leaf
- 1 tsp of ground coriander
- 1 tsp of rosemary
- 1 tsp of thyme
- 1 tsp of Italian herbs
- ½ tbsp of veg bouillon
- ½ tbsp of nutritional yeast (optional - contains gluten)
- 3 x large potatoes (peeled & chopped)
- Pinch of salt & pepper
- ½ squeeze of lemon
Method
Sauté onion, leeks and garlic in olive oil until soft Add in all herbs and stir Add in veg bouillon & nutritional yeast (if using), potatoes and cover with water Bring to boil and simmer until soft Add in salt/pepper and lemon juice to taste Blend & Enjoy!
I like to add artichokes, nuts and croutons on top.
